About Us
We are a farm in Basilicata, on the slopes of Monte Sirino, at 1,200 metres above sea level, in the province of Potenza — an authentic, fresh and unspoiled place. Here we raise around 200 Alpine Chamois goats, a breed renowned for the exceptional quality of its milk, which has adapted perfectly to our land.
Animal welfare is at the heart of what we do. The goats roam freely on pasture for most of the day, with access to around 200 hectares of meadows, pastures, fodder crops, chestnut groves, and beech and alder woodland. This outdoor life is reflected in the flavour of our products. Our pasture milk tastes markedly different from that produced in intensive farming systems. On days with poor weather, their diet is supplemented with oats, maize, and field beans.
We follow the natural cycle of the animals, with mating in late summer and births between February and March. For this reason, production is suspended from November to February.
Every day, during the lactation period, we process freshly milked milk in our dairy and produce ricotta fresca, ricotta salata, primo sale, and semi-aged and aged cheeses. On request, we also offer filled versions with rocket, olives, or crushed pistachio or hazelnut.
Everything is made entirely by hand, using natural rennet, to bring to the table simple, authentic flavours that express the soul of our land.
